I've used both Fermaid K and Wyeast's yeast nutrient. Wyeast has two different packages for the exact same product - one for wine and one for beer - but the suggested pitching rates for a 5 gallon batch are the same. I usually drop the stuff in about the same time I put in the immersion chiller - about 15 minutes before flameout.
If you ever use White Labs' servomyeces you need to take it out of the gelatin capsule - it is not mentioned on the packaging, but after I found the tablet intact with the hop debris in my boil kettle, I figured it was not doing anything for the wort that had been transferred over to the fermenter.
