HMMM OK you got me started, just how Much Time do you have?
LOL Malt the wheat this does 3 nice things on the surface.
1) reduces the protein (if you remember to remove the rootlets and acrospire afterwards)
2) Gives the wheat Diastatic power of it's own 
3) Gives a sense of Purpose Beyond watching The weeds dry out in the sticks
