Dark wheat in saison

Thu May 07, 2009 2:00 pm

I'm brewing up a saison and thinking of using dark wheat as a sub for or part of the pale wheat portion of the grain bill. Anyone have any experience/tips using dark wheat and what flavor profile to expect compared to pale wheat malt?

Dark wheat is what is traditionally used in Dunkelweizen instead of regular wheat malt and darker specialty grains... it's like the Munich Malt of Wheat Malts. Has a little less enzymes, but is good stuff.
