Anyone ever use Valencia peel instead of bitter orange peel?

Sun Apr 19, 2009 9:58 am

I was thinking of trying it out on a Belgian pale ale but wasn't sure if it would be appropriate. Is there something about the sweet oranges that makes them inferior to the bitter oranges for the use of peels in beer? Or is it simply a different flavor?

Id say its just a different flavor. I personally like fresh orange peel for my wits and ive always used that instead of the bitter orange peel

I've used the sweet orange peel and liked it better.

+1

Just don't try to zest the oranges during your boil. You need to prepare the zest ahead of time. It takes a long time to get enough zest.

Has anyone tried dry valencia peel in one batch and fresh valencia zest in another? What flavor differences have you noticed? I think I'm going to try the dry stuff first. The valencias you find at the supermarket are sprayed and waxed with all kinds of crap to make it look pretty.

Skip the zester, just use a potato peeler. works fine just dont go too deep or you end up with a pith flavor. Any citrus fruits will give you flavor good flavour, I like using blood oranges and limes. All I can recomend is put the bastards in a hop bag. I didnt once and clogged the shit out of my plate chiller and pump. Not a great experience.
I also threw an orange in the fermenter doing a Witt once. I was pissed when brewing and forgot about it. it was an interesting find inj the bottom of the fermenter when bottling

Cheers DK

i'd use the zester....you only want to zest the very outter edges of the peel and not get any of the yellow shit. For my last Wit i zested grapefruit, blood orange, tangerine, and lemon....nothing beats a muddled mess of citrus.

I used one of these

....and it only took me about 5 minutes to get 3 oz of fresh zest
suck it

a spud peeler will do the job boobookittyfuk, just a matter of skill. all you want is the yellow stuff not the white pith. With you on the mixing of citrus flavours though, check in a tangarine or tangello.
