So what I have been told is that it will help to bind unwanted protiens together so they drop out of your brew. So, adding too much will start to bind wanted protiens? And make your beer thin? Isn't it unfermented sugar the thing that gives beer body?

Does anyone know the science behind Irish Moss?

I think that I found the answer to my own question. Here is a page that does a pretty good job of explaining the science behind clarifiers, including Irish Moss.
