I have only used the acid malt once. I added some, and checked the PH. It was fine after the addition. Otherwise I would have continued adding the malt.

I don't have a problem with that. Otherwise there wouldn't be as much creative beer styles out there. But I certainly like the idea of the Reinheisgebot and what it does for German beers.
