If Justin is one of the judges, I'd go with some dregs from several sour beers.
Sour/Brett Beer Fermenting: Lambic, Kreik, Flanders Red, Berliner Weisse, Orval, English Stock Ale
On Tap: nothing
Next on Tap: Belgian Pale Ale, American ESB and Sweet Cider
Next to Brew: Belgian Tripel and Dark Strong Ale

Just make sure the finished product doesn't taste weinery. Justin hates that.

Cigar Boxes!
You can use them to smoke a small amount of the steeping grains, and some to wood age the resulting beer, two uses for the same product. I have used it for Northern British Brown Ale and it adds quite a nice, unusual flavor...and have been using Cigar Boxes for smoking brisket, prime rib and kabanosy sausages for years with many positive feedback.

I wanna thank everybody who responded with suggestions. We ended up not using any of them and maybe that was for the best. That's all I can say on that subject. :wink:
