To sanitize my oak, I boil up some water and then turn off the heat. Quickly throw the cubes in and let them sit in near boiling water for 15 min. Drain and add to the beer. i have been doing a lot of oak aged beers lately and have found that beers that are oak aged for a shorter period tend to have a more noticeable oak aroma/flavor than beers that have been aged for much longer (6+ mos to a year). The oak will meld well with the beer if cold conditioned for a month or two. I have also been messing around with oak additions in primary vs. secondary.

That sound really interesting.
I have a Saison I am going to brew Sunday. I think I will try aging half with chardonayed oak, sounds yummy. I mentioned it to the girlfriend, she thought so to

Ooops, I just saw the session was about Saison on Sunday. Maybe I'll wait untill Monday to brew!
