I've done two one hop beers.

Amarillo - Awesome
Simcoe - good but a little harsh.

For me - Summit in high volume smells like onion or BO.

I'm upping the late hops. At 15% AAU, the IBUs get pretty high, pretty quick. So I don't want to throw off the balance of the recipe. Which is about 1.069 OG with about 68-72 IBUs. The majority are going in at 10, 2 and flameout/whirlpool.


I didn't get any of the onion or garlic smells on the last brew. I got pretty solid tangerine/grapefruit. My wife swore the fermenter was full of grapefruit. I just need to get that solid nose in the final beer.

Glad you liked it. I get great head retention and lacing on mine. It was a huge hit at the tailgate. Feels good to see someone drink 4 pints of your beer. My SMaSH was Munich/Northern Brewer. If you want something with a little more malt background I would highly suggest Munich or Vienna.

I'm thinking of doing a munich with a real low dose of hops, Cal-Ale yeast at lower temp, and mash at 154 for a full body and malty beer. My next batch is going to be Maris Otter again but this time with just Northern Brewer. I'll need to up the ounces a little because of the lower AA level but I'm intending to make as similar wort as I can.

That's what mine was. About 4% ABV and around 26 IBUs. Great session beer. Beautiful color.

Just brewed another SMaSH this weekend. Vienna & Centennial.

Sly Fox has been doing the single hop beers since 2004. They sell the hop project in year installments so bars will carry each month's beer. I try to get a least one pint of each variety. Great bears and awesome concept.
