Help me hop my pale ale

Thu Jun 04, 2009 6:38 am

So I have a pale ale malt bill that I've brewed with a few times and changed the hop bill every time. I'm brewing again tonight, and can't decide how I want to go about it. I am leaning toward wanting to get as citrus-y as possible. I'm also kicking around the idea of doing this whole "add all the hops in the last 10-15mins" program everyone's raving about. Just wanting to see what people on here would do to inspire me :bnarmy:

Here's the hops I have on hand that I would consider using this time around:
Magnum
Simcoe
Amarillo
Centennial

Again, I have yet to brew this one in such a way to make it really citrusy, but I really do like me a beer that has that type of hop character during the summer. And I think the past few days of this ridiculously nice weather we have been having has pushed me in that direction for this.

The malt bill:
Pale Malt (2 Row) UK (3.0 SRM) Grain 75.95 %
Munich Malt - 10L (10.0 SRM) Grain 10.13 %
Caramel/Crystal Malt - 10L (10.0 SRM) Grain 7.59 %
Victory Malt (25.0 SRM) Grain 6.33 %

I'm a real fan of late hopped IPA's. Your grain bill is very similar to my "house IPA" which I have posted a link to here a couple zillion times (sorry guys).

Check out this link:

Then, adapt that hop bill so you do it with the Simcoe instead of my Willamette additions, and do them 50/50 instead of 75/25. Also, definitely dry hop it with the Amarillo and use Centennial for the FWH addition so that total IBUs give you about a 1:1 BU:GU ratio. It'll turn out great-

How much of each hop do you have?

I'd use the Magnum for bittering.

Simcoe, Centenial and Amirillo make a nice 3 hop combination. Maybe a .5 oz of each @ 30/0/and dry hopped. :aaron

Thanks guys! Steve, I worked with what you sent me. I'm doing 50/50 Simcoe+Centennial additions from 20min to flame out in 5min increments. At flameout I'm doing a 50/50 Centennial+Amarillo. The jury is still out on whether to dry hop or not. Beersmith has me at 38 IBU, but with that extra perceived bitterness from all the late hopping, I don't want to send this one out into IPA territory

Yeah, Sorry Evan. I forgot this is an APA instead of an IPA. It will be TASTY though!
