Favorite Saison Yeast??

What is your Favorite Saison Yeast??

Doing one soon, have no idea what to use for the yeast, have a decent recipe though, I think. :)

Belle Saison from Lallemond.

Took a saison from 1072 down to 1005.

I gave up on the Saison DuPont yeast. Too much of a pain in the ass. Belle Saison is a great replacement.

This summer I have been using WL 565 and have had no problems with it finishing properly in normal time. My favorite strain is WY 3724 although with the first generation it can take up to 6 wks and 85 deg plus to finish out. Successive pitches do finish out in normal time at least in my experiences.

I second the Bella Saison yeast and I also like Wyeast 3711. It's a 6 dollar price difference for me, so I have been using The dry yeast more often. I just added it to a wheat beer with Wai Iti hops...turned out well.

Belle Saison is fantastic. Use it. Love it. It will get you to 1.002-1.005. Just takes 3-4 weeks. Patience.

Did a mid winter saison with Mangrove Jacks M27 belgian ale 1.061-1.001. goes great with motueka and styrian goldings.
Fermenting; manuka smoked barley wine, 3203 red ale.
Bottled; too many,
Kegged; 60/-
On Deck; Count ding dong and inbred ding dong, belgian dark strong with/out brett.
Building; single tier brew system

Belle Saison went beast mode on the batch I just kegged... ~10.7%.
