Victory Malt

Guys,

A number of the recipes I see you guys post (and a few of Jamil's as well) use Victory malt. I understand that this is an American malt?? Unfortunately, I'm not aware of any homebrew shops in Australia that carry this malt.

Can anyone suggest a good continental or britsh malt alternative. Or if any Aussies out there know of an aussie malt that gives similar characteristics???

What do you use this variety for?? Is it roasty? Toasty? dare I say.... biscuity??

I'd like to make the recipes as close to the original as possible, but with this malt I dont even know where to start.

Bries makes Victory malt. You can substitute Weyermann Melanoidin malt instead.

I'm gonna have to disagree with you there Hotrod.

Victory provides a toasted, and yes, biscuity flavor. In "Radical Brewing", Randy Mosher says that Victory is Breiss' version of Amber or Biscuit Malt.

Melanoidin is comparable to Aromatic, more like Munich on steriods. It will give a much stronger malt flavor than Victory.

I agree about the Victory and Biscuit being similar. However, Victory has more of a nutty flavor than Biscuit, so they won't taste quite the same, but close enough for most brews. No other substitution will get you as close.

Thanks Guys,

Unfortunately, Buscuit Malt is in the same category as Victory for me; no can get. Who makes buscuit malt?

I can get weyerman melanoidin.... maybe if I just use less so that the flavour is less intense??

Anymore ideas?? Jamil, John P, Oz.... anyone?
