Flavoring extracts on bottling day

Sun Mar 27, 2011 7:47 am

I brewed an O'Fallen Cherry Chocolate Beer clone. I have never added flavoring extracts on bottle day, the recipie has you add .5oz liquid choclate and 2.0 oz liquid cherry extracts before bottling. My question is how are these extracts sanitized? Using Brewers Best cherry and Durkee chocolate.

Not sure of the Durkee's chocolate extract, but I do know the brewer's best fruit extracts are safe to use directly out of the bottle. I would also bet the Durkee's is fine to use as well.

I would have to agree with brewinhard on this one. They are food products and they have strict protocol to follow. I would also use it fresh from the container. If anything, sanitize the container that they come in before opening it, then you can be sure that nothing will contaminate it.

For a blueberry witbier last year, I just dumped in 2 oz of the blueberry extract straight into the keg and had no issues with contamination. I think you'll be fine as well.
