When to add my fruit?

Tue May 18, 2010 2:28 pm

I am trying to figure the best time and how to add fruit to my beer
In a nut shell, I have a conical and my fermentation has slowed considerably and I want to add some watermelon to my beer soon, i have heard some do it in the primary, some secondary, some at other times. I want to do primary, i think it will give me the best flavors and balance
so
#1 Do I drain all my trub and add it then
or
#2 Do I leave the yeast in and just add my fruit and stir it up and let it ferment again, clear then keg
or
any suggestions

Thanks

Greetings,

the current issue of Zymurgy has a whole article about brewing with fruit. I don't remember the details or the answer to your question, but I do believe it's in there...
