With a lager you need everything you can get out of it. Definitely rehydrate it. That's what I did anyway. It worked well for me.


While propagating yeast is ideal at 70 degrees, pitching yeast at that temp is not ideal, especially for a lager. This is why many people chill their lager starter, decant the liquid, and cold pitch into their wort.

Brewed 10 gallons of German Pils yesterday with the S-189. OG of 1.055, pitch 22 grams into each carboy, just sprinkled on the top at 48 degrees. about 36 hours of lag before I saw the foam starting to form. Its fermenting at 50f right now and looking good.

Have you ever tried rehydrating this yeast in cooler water, and pitching it cold with good success?

Personally I don't believe in rehydrating any dry yeast, I think its yet another place where an infection could be picked up.

I just pulled a sample to see if my d-rest was complete. Got 79% Attenuation with this yeast. Pilsner is gonna be freaking great, very close to Prima Pils. Can't wait fr the lagering phase to be done! I;m in love with this yeast now.
