Adding honey to fermenter

Sat Jan 16, 2010 2:38 am

Going to feed my barley wine with some honey in the secondary.

question-
Is it better to make a syrup with water and honey and stir it in to the beer.
Or is it better to pour the "syrup" in the 2:nd fermenter first and then rack the beer on top of it?

I think I would add the honey water mix to the primary fermentor, so that the bulk of the yeast is still in there.

Thats what i thought as well, but everytime i hear something about honey
and fermentation people always recomend to add it to the secondary in order to
keep as much of the flavour as possible...

But I dont care too much about honeyflavour in this one.
I think it will add a nice complexity no mather what.

Thanks for your reply bigdan
