I know I'm stating the obvious, but Spanish Cedar is not really cedar, it's more like mahogony. You shouldn't use the really fragrant, orangy-redc edar they use to keep moths away.

I am using the Trade named Spanish Cedar that is in fact a type of Central American Mahogany. Still called Spanish Cedar and still I would say a little red compared to say oak.

I tried this lat night upon transfering to the corny and the two samples, one with and one without the wood, tasted fairly similar. They are from the same fermentation but I was expecting a more pronounced difference. I have learned though that these things can change with some time in the tank. As is mellows I expect the cedar flavors to become more pronounced. This is a beer that already has quite a complex aroma from all the hops so we will se if the Cedar shines thru.

More to come as it ages.
