No worries Thirsty.

I've only uesd the dry wheat yeast and had no problems with it. Acutally worked better than I expected.

A nice cold hefe is just the ticket on a stinking hot day in Melbourne :lol:

Well, the Hefe turned out fine. Got some cloves, got some banana. Its a little thin for my tastes, I reckon because I had trouble getting the mash temp up and it probably did a lot of its conversion in Beta territory. But then again, I like my hefes nice and chewy, so maybe I'm being a bit picky. A little bit short on the bitterness maybe, not quite balanced. Not the best Hefe I've ever had, but not the worst by a long shot either. Happy.

The 3056 seemed to work, I'm looking forward to trying out a few different wheat type yeasts and comparing the flavours

mmmmmm. Hefe's
