German Chocolate Wheat - WTF happened?

This started as a response to a Q in another thread, but it may get more responses if I posted here:

Q: What is this chocolate hefe in you sig?

A: Sorry guys I don't mean to ruin your moment, but it's not that exciting. I brewed a hefe with 52% German Chocolate Wheat Malt. GR391 at MoreBeer. This was a 1 for 1 replacement of German Wheat Malt in the recipie since I didn't want to use American Wheat Malt. It was a last minute "EFF IT, lets see what happens" moment, egged on by my local purveyor of malts (thanks sean!).

With GR391 having a Lov of 375-450L I expected a black beer which may or may not come out tasting like an ashtray.

To my surprise, this wasn't the case. This ended up in the 6-8 SRM range, with no noticeable characteristics differentiating it from a standard hefe.

I'll be sending a bottle or two out in the Secret Santa exchange for anyone interested.

So I dunno what happened. Any Ideas?

BTW, the guys at the shop had similar results in their batches. So I'm less inclined to think it's a process issue.

sounds like it may have been dark wheat malt (7-8L) instead of chocolate wheat. did the color of the malt look like chocolate malt or more like munich?

You're probably right. It was much lighter than I expected. B3 doesn't carry dark wheat malt, so I'm guessing it was a supplier mix up.

I'm keeping the name though :). Now it has a story.

I think you're pretty lucky that you got dark wheat instead of chocolate wheat! I don't think a 50% chocolate malt beer would be good at all, wheat or barley.

i

i was thinking like 50% wheat 35% 2 row (or 2 row and a lil caramel but probably not necessary) and 10-15% belgian chocolate to give it the "ashtray" bite. could be good.
