WLP500 Trappist Ale Yeast

Wed Aug 16, 2006 3:17 am

I brewed a Belguim Golden Ale using WLP500. Tasted beer after fermentation tasted just like a hefeweizen. Yeast was pitched at 65 deg F and fermented at 65 deg. F for 14 days After frementation slowed, I brought up temp to 70 deg F for a week before kegging. Tasted beer after fermentation. It tasted just like a hefeweizen. Is this normal for a young beer brewed with a Trappist culture? I have tasted many mature beers using a Trappist style yeast. So I have a good ideal of how it should taste. This is the first time I used a Trappist yeast. So, I am ignorant of what it should smell and taste like at this young stage, but I do know how hefeweizen tastes and this beer tastes just like a hefeweizen without the wheat. Is this normal?

Which component of Hefeweizen are you tasting, Clove, Banana, Bubblegum, Yeast? Knowing which of these flavors will help us determine what may have gone right or wrong.

I've used this yeast several times and it will be MEGA fruity when so young. I'm interested in your answer to Bub's question, but unless they had a lebeling fuck up at White Labs, it'll mellow out as it matures.

Clove and maybe banna are noticable. No bubblegum taste.
Tasted today seemed a little less of a Hefeweizen taste today. Drinking a Westmalle tripel right now. I detect very little of the flavors I am getting from my beer. Also, I do not think that the problem comes from any brewhouse problem. The beer is very clean. It will be a a very good beer but, I'm not sure if the fimal product will be what I wanted a Belgium Golden Ale.

Did you jmake a starter? Stressed yeast (from underpitching) will sometimes produce that clove flavor though I have not heard of it happening with that yeast.

You are correct Sir! I did not make a starter. I don't always make one for ales. Much of the time, the flavors from underpitching can turn out great.
