Cocoa Powder

Thu Nov 26, 2009 3:50 am

I plan on brewing JZ's choc hazlenut porter (minus the hazelnut) and cocoa powder isn't listed in beer smith. Anyone know ppg for cocoa powder? 35-40?

With the grain bill I'm already at the target OG plus a bit, this'll put me over a couple points.

Cocoa powder is unsweetened (generally). Hot Cocoa mix is what you want to avoid. Just make sure the cocoa has no sugar. Hershey's says "unsweetened" right on the front.

I personally like the subtle difference from Ghirardelli's unsweetened bakers cocoa. also, stay away from the unsweetened chocolate bars for baking. the oils and fats come out during the boil. I only made that mistake once and gave the rest of the bar to a friend as a prank.
