WLP001 in Jami's Winter Warmer?

Mon Nov 02, 2009 12:10 pm

My next 2 brews are going to be from BSC...the American Amber Ale Recipe and The Winter Warmer. Since the WW is pretty big, I thought about pitching on the Amber Ale yeast but wasn't sure how it would come out. Jamil suggests the WLP013 London Ale for that fruity character, but would it be bad to use the 001? I assume I'd pitch around the same temperature of 68F.

What do you think?

Never brewed Jamil's winter warmer. The american amber "west coast blaster" is a damn good recipe though. I am making it next weekend for the third time.

I think you would be better off using an English ale yeast in your American amber than using an American ale yeast in your Winter Warmer. I've used the London ale yeast and it isn't all that fruity.

Would you ferment it a little cooler, say about 66 F?

Thanks.

Yeah that's not a bad idea. If you are especially concerned about style, the basic idea is that a little fruitiness in an American amber is better than no fruitiness in a winter warmer. I think with the lower fermentation temp and the London ale yeast you'll probably get the best of both worlds.

If you already purchased the WL 001 then by all means use it for both of those brews. If you have an English yeast strain than use that for your Amber and Winter warmer. If you still want to use WL 001 for the amber to nail your yeast flavor, then go buy a pack or two of Nottingham dry yeast and use that for the winter warmer. It will come out great!

+1 on the Nottingham dry yeast. I think it is mentioned in Jamil's recipe.

I recently did a batch of the BCS winter warmer using WLP-007. It wasn't incredibly fruity, but still had plenty of the qualities I was hoping for. Also, it can handle the higher alcohol. Could be a good compromise for both beers.
