Wyeast 1056 - is it really that fast?

Wed Sep 09, 2009 8:10 pm

First time using 1056 - after 4 days it is at 1.012 from an OG is 1.052. That is the fastest I have seen a yeast work, but then again, I am getting back into this after a 20 year hiatus.

That sounds pretty typical. You still want to let it go for another 4-5 days. This will allow the yeast to clean up after itself, metabolizing unwanted esters produced during the initial growth phase. Resist the urge to rack the beer off the yeast until at least 10 days have passed. Better yet, take the easy route and don't rack it to secondary at all. There is no rush to get it off the yeast.

You want fast? Try an english strain. WLP002 or US-04. Done in 2 or 3 days.
