Oakboy and living culture

Fri Jul 17, 2009 2:46 pm

I did a search and really didn't see exactly my question so hope I'm not repeating. I just put an Oakboy which I got from Northern Brewer in my olde ale and Flanders red and was curious if those pieces of oak will harbor a yeast/bactria culture and if so when I'm done with the wood how do I keep the culture viable while storing?

Yes you can save it for future uses however it will not be the same blend % as the bugs you pitched out of the vial or pack.

Ok I will keep that in mind how about drying it out without mold growth and not killing what is in the wood?

I'm just going to wing it here and say, just wait until you have a new beer ready to inoculate. Take the wood out of the finished Flanders and drop it directly into the new batch. Since the Flanders/sours can sit on the wood for weeks/months/years just wait to keg or bottle until you have a new batch ready for the wood. The safest way to store the oak is IN beer.

Just a though. I haven't actually gotten there yet...
