Which Ale Yeast is best to to make a Schwarzbier?

Tue May 19, 2009 6:44 pm

I would like to brew a Schwarzbier but i don't have the ability right now to brew at lager temps, so i am thinking of using either a 2112 California Lager or 1007 German Ale yeast. Does anyone have any experience or suggestions on which yeast to use to get the best results?

Thanks

I tried WLP830, wasn't bad.

Brewed a schwartzbier with US05 once. 1 month of lagering later is was quite nice. You'd get better results pitching a big pitch of WLP001.

IIRC, Jamil told a story about touring the Sierra Nevada Brewery and seeing a sheet listing the Cal Ale Yeast as the yeast they brewed their schwartzbier with. Throws sulphur like a lager yeast and takes the same amount of time to ferment.

I was thinking about using WLP001 yeast, didn't think of the US05 though. If i could brew 20 gallons at a time i would divide it up to 5 gallons batches and pitch and different yeast and see what wins. Would i need to lager the beer for a long time to give it time to clean up?

That German ale would be gould, but I believe you would still need to ferment around 60-62°. I made an Oktoberfest with the Kolsch yeast that turned out very clean and "lagerish."

If you can ferment at 60-62, I would use the 1007, 100%. If you have to ferment at 65+, I would use 001/1056/05.
