Nope, you never really know. I kinda imagine it's like pouring water into oil - but not as dramatic. Yes, CO2 is heavier than air, but not by much. It probably takes a long time for all of if to drop down and separate. When I do it, I hook up the gas to the liquid line and open the pressure relief valve for 10 seconds or so. Then I use a jumper and push some starsan in there - again, venting with the pressure relief. Since it's filling up with liquid very slowly from the bottom - I imagine that most of any remaining O2 is pushed out first. Finally, the starsan gets pushed out of there with CO2 - onto the next keg.
