Wheat in Black Sheep for extract brewers?

So, I'm still doing extract, and I love yorkshire beers. I was listening to the recipe as JZ was giving it out, and it was unclear to me what to do with the torrified wheat that is in the all grain recipe. JZ suggested going to 74.2% Maris Otter extract (substantially lower than in the all grain recipe), which when added to the ~11.5% from pale chocolate and crystal 80, leaves something like 14% of the grain bill unfilled.


What's the right substitution to torrified wheat in an extract brew? Did JZ leave off a wheat extract addition? That would explain the drop in percentage for maris otter, since you'd expect additional barley to be in the wheat extracts you can buy, but I wasn't sure. Anyone with more experience converting all grain to extract want to help me out?
