Deschutes Yeast

So in all the CYBI Deschutes episodes the clone recipes call for WLP002. Playing with these recipes, I wonder if WLP007 is the appropriate yeast as every time I replace the WLP002 with the WLP007 I get a perfect intended final gravity. Jimmy Seifrit simply describes the yeast as a highly flocculant English ale yeast. I think WLP007 is the Deschutes yeast given the attenuation and high flocculation that the recipes call for. Thoughts?

i've started using 007 every time it calls for an english ale yeast...better attenuation with a little cleaner profile...just my 2 cents but i absolutely love the stuff.

Currently drinking my own D. alt recipe and loving the switch to the 007 from WL029. Really leaves some nice malt behind with clean crisp ferment. Gotta try this one in some other styles now!

Also very curious about the yeast style...I only have the option of wyeast at my brewshop and will be going with the Wyeast1968. How did they get the FG so low using this kind of yeast? Even the WLP002 doesn't attenuate very high. Could really use some help on deciding to go with the 1968 or a higher attenuating wyeast variety.

1098 Whitbread - dry is the Wyeast equivalent of WLP007.

Yeah I realize that the whitbread is higher attenuating but still don't understand how the Can you brew it team got such a low gravity with the wlp002/wyeast1968 yeast.
