Maybe it was an aging thing. I didn't find the hop character of the Mirror Pond to be subtle at all. The Mirror Pond that I had had pretty pronounced hop flavor and aroma.

Mash: 149ºF for 60 min

28 g Cascade (6% AA) 85 min - 22 IBU
28 g Cascade (6% AA) 30 min - 13 IBU
28 g Cascade (6% AA) 5 min - 4 IBU
28 g Cascade (6% AA) 0 min - 3 IBU
21 g Cascade (6% AA) dry hop - 7 days

11 g Calcium Sulfate

WLP002 (Wy1968) English Ale - 65ºF

I listened to part of the show last night and checked with my LHBS and they don't carry the GW pale ale malt, just the 2 row pale malt. Wonder if splitting that part of the grist 50/50 or 60/40 with british pale or Maris Otter would make it closer? My favorite flavor of Mirror Pond and others is that noticeable bready thing. I just love it.

Yes, absolutely. The idea is to use a British style pale malt in Mirror Pond. I really like MO or Gambrinus ESB malt in my pale ales. It really brings out the bready malt backbone.

The way I heard the comments was that the domestic pale ale malt was somewhere in between domestic 2 row and a British malt. I'm doing it this weekend with 6.53 lbs 2 row and 5.00 lbs Maris Otter - at least that's what I've decided to experiment with.

Yes, try about a 50/50 mix. It won't be the same, but it should give something in the general character.

Mashing my mirror pond right now. Couldnt get my hands on the specific base malt so i am just using 2row. I know it wont be the same but it'll be a nice beer.

listened to this show again to get ready for my own attempt, and I didn't hear the AA% of the hops in either the regular or rebrew shows

the Deschutes brewer said the 85 min and 30 min additions gave 40 IBU

Justin used .99 oz at 85, and .99oz at 30

so

1 ounce each, AA = AAU

85 minute hop utilization = .245
30 minute hop utilization = .177 (both from How to Brew)

X x .245 x 75 + (X x .177 x 75) /6 (util formula from How to Brew) should equal 40 (IBU given by Deschutes for these 2 additions)

X x 3.4375 + X x 2.2125 = 40
5.65 X = 40
X = 7

7% AA assumption for the Cascades in the recipe?
On tap 1: Dry Irish
On tap 2: El Jefeweizen
On tap 3: Vienna
kegged: Rye Amber, Belgian Dark Strong, CYBI Mirror Pond, Irish Red, RIS
lagering: Vienna, Helles, Cream Ale, CAP
