Which show: brewer who combined a Lager and Belgian yeast?

Thu Feb 10, 2011 6:06 am

I know I heard this on the BN cuz it's the only beer radio I listen to. It was either The Session or Can You Brew It?

A brewer talked about starting a Belgian out cold with Lager yeast and then raising the temp while adding Belgian yeast. I thought it might have been Ithica but I just listened to that entire show and it wasn't the one.

Anybody remember what I'm talking about / which show? Or was I drunk?

I thought it was the The Session - Schmaltz Brewing show. Jeremy touched briefly on it, but didn't have too many details. It was the last show of 2010.

I've never done this exactly but on several occasions I have had good luck with fermenting out half a batch with lager yeast and half with belgian. When done and kegged I blend in a good bit of the lager into the belgian. It smooths out the esters/phenols and makes for a very interesting blend. The best result I had was a Munich Dunkel (833) with 1/3 of it being fermented with Wyeast 1214. Came out similar to New Belgian 1554 black ale.

I think I remember someone talking about a sour collaboration they did with Stone? I think they said they used Sone's lager yeast for primary fermentation.
