We have started off using Fermentis 04 rehydrated for most all of our beers. The kolsch and o-fest use the wlp029 kolsch yeast.

I have never made a DOTW run. I will more than likely try and keep my head screwed on straight so I don't make an ass out of myself. :)

Very cool to see some local representation on The Sunday Session. I look forward to hearing it. I'm just down in Howard City and haven't had a chance to come check out the place yet. Hopefully in the next few weeks!
