My brain works in numbers & I was a little disappointed they briefly talked about the complexity of the honey in your kolsch but really didn't go into it very far, instead talking about different options like the honey malt and such. Would you mind sharing some of the brewer's info like what kind of honey, how much honey you used & how late you added it in the process? It piqued my interest but I couldn't mentally taste it with the descriptions given on air.

For sure man. I will post the exact recipe later but for now here is the scoop with the honey. It was just a locally sourced wild flower honey. My LHBS carries honey from them and that is what Iwent with. It was 60lbs in a 15bbl batch. It was added at whirlpool. We whirlpool for 10 minutes, then let it rest 30-40 min before running off.
I can post more specifics later, but I think it was 87% Weyermann Pils and 13% Wheat. 1.5lbs of Magnum at 60, which on my system tastes like 15 ibu. OG: 1.044ish FG: 1.004
I pitched the WL kolsch yeast at 59 and left it there for 48 hrs, I then shut the jacket off and it worked it's way up to 70 over the next few days. Lagered it at 34 for four weeks.
I did float the honey container in hit water to make it easier to pour. I will double check this info but I think it is all correct.
Let me know if that helps or leads to more questions.
