I suppose my grains did turn out OK. I just finished brewing them and it went good. The stout also smelled fine as I was transfering it. I fell a bit short on my O.G. but I don't think it has anything to do with the keeping of the grain. I am pretty sure that my mini-mash methods leave something to be desired. I'll take the rest of this story to a more appropriate thred.

1. You'll be just fine ... in fact, you did great !
2. Have your LHBS crush half the grain a second time ... better extraction.
3. Make yourself a second immersion chiller. Place it inline before the first chiller in a bucket (cooler, whatever) of salty icewater. The first chiller doesn't have to be anything terribly fancy. This method will get you cool very quicklike. DMS be damned!
