How hot did you use it at? Too hot and you would most likely have denatured it. Greater than 160F and you most probably damaged the enzymes active site.

Well it would damage more than just the active site... what I was wondering was if the fungal amylases have a different temperature range than typical barley amylases. I was running them in the 145-155 F range, should have made that clearer in my earlier post.

At those temps you should be fine. On a side note, I just added some amylase enzyme to a stuck fermentation on a huge old ale I brewed (1.110 down to only 1.040, racked on a full yeast cake with a low mash temp and simple sugars). I let the enzyme work for about 40 hrs then I pitched an active champagne yeast starter. After two weeks, there is absolutely no difference in gravity. Hmmmmmm.......

I am. I'm brewing the Arrogant Bastard recipe from the re-brew show. Smells pretty good with the first runnings.

Brewing Gordon Strong's Doppelbock recipe. Pulled the first decoction too dry, took about an hour to boil, and by the time I added it back, the temp only raised a couple of degrees. Immediately pulled a second, somewhat looser decoction, and after adding it back, got the 10 degree raise I was looking for. Hope the long 144-146 rest won't hurt the body too much.

Doing an APA right now. This and my ESB are the easiest, most relaxing beers I make. Quick brew day with a nice and easy flow.

The ESB is up for Saturday. Cooking up the yeast starter tonight.

August is going to be a great month for beer, have a wheat and German Pils on tap and a BoPils fermenting :-)

Well I brewed a 10 gallon batch of JZ's Evil Twin (the homebrew one) I keep screwing up on my collection for 90 minute boils and only got 8 gallons of wort. Oh well it will still be good shit! CHEERS!
