flocking yeast post fermentation

Now that I have a chest freezer with temp control, I plan on dropping the temp. post fermentation to make the yeast floc. I have converted to primary only fermentations so the beer will sit in the carboy until I bottle. I used US-05 for Jamil's west coast blaster and pitched this past Saturday. I was thinking about letting it sit at 67 degrees for 11 days then dropping the temp to just above freezing for 3 days then bottle. It has already fermented 5 days and I think it is almost done, but another 6 days will allow the yeast to clean up post fermentation. My question is will I have enough yeast to bottle condition using this method? Generally my beers fully carbonate after 2 weeks but that is before I had a temp controlled chest freezer.

To echo what Bub said, you'll always have some yeast in your beer (unless you filter @ .2 micons). I doubt that you're filtering since you want to bottle condition. It may take a little longer to carbonate, but it will get there.
I think I've had about enough beer tonight...Now I need some Whiskey to sober up
