How many step ups for dupont culter?

I planning on taking the yeast out of 2 bottles and pitch it into a 2 liter starter. Any idea how many step ups I should do. It is going into a 1.060 s.g. Saison.

Do you even know if that yeast is the primary Saison yeast? It might just be their secondary, bottle conditioning yeast.

I think White Labs sells a Saison yeast that is supposed to be the same one used in DuPont.

Assuming it is the primary yeast strain, I would start out with only about 50 ml of starter wort, then step up to about 500 ml, and then up to 2 liters. You don't want to go over a 10X step up.

use WLP565 or wyeast 3724....that is dupont yeast!

becareful "stepping up" yeast from a bottle....chances are you WILL be growing more than just the yeast that you want to grow.

why not just buy it and have a pure culture.

even though the 'Dupont' strain is available, it would be a good experiment to see if the strain has changed. i'd do a 1 pint 1.034 starter with the dregs of 2 FRESH bottles. smell at high krausen and if all seems well, pitch into a 2 quart 1.034 starter. bugeater is right, try not to exceed 10X. the ideal is about 5X.

Here is how I grow my Dupont yeast. Clean the top of the bottle and cork with starsan. Pour out beer (drink beer, thinking this is one of the best beers in the world) leaving yeast in the bottle. Than and about 4ozs of 1.040 wort to bottle with nutrients cap with tinfoil shake 2-4 times a day till signs of fermentation in bottle. Than pour the bottle in to 1 liter of 1.040 wort with nutrients using a stir plate. Grow yeast and will be good for 5 gals.

By the way my Saison won 1st place in the state fair and 2nd in best of show with the yeast from a bottle of Dupont.
