Crashing

How long after you stop fermenting do you crash the fermenter?

My FG has been the same (1.012) for three days now so I started crashing tonight. This is after 6 days in the fermenter at 68 deg.

This is my first time fermenting in a stainless conical.

When I used carboys I would ferment in primary for 9 days then rack to secondary for another nine days then crash for a day or two. But I never checked the FG until I was racking to a ket or bottling.

What's the rush? I usually ferment for 10 days and crash for a minimum of 4 days (or more depending on the yeast).

Give the yeast time to not only ferment but to have time to clean up some of the fermentation byproducts as well. Unless you are making fairly low gravity beers...

After I pitch my yeast and put the fermenter in the fermentation fridge, I check it once after about 24 hours to make sure fermentation took off. I usually don't even open the door again for 10 days unless I am sticking another carboy in there. Your original schedule looks perfect to me. There really isn't any reason to change is there? If you get too impatient the quality of your beer will suffer.

10 days? What's the rush? I usually go 14 minimum, sometimes 21, then I'll crash it. :D

Seriously, I let laziness overtake thirstyness. The yeast don't know my schedule. I therefore over-estimate theirs. If I NEED to drink the homebrew in the fermenter, then it's time to brew a few batches because the pipeline has emptied.

I'm with Bdawg here... Due to apathy I have had beers in primary for about 24-26 days. Then keg. No problems..
