Pellicle question

Wed Oct 15, 2014 3:37 am

My sour beer formed a pellicle around month8. I was going to keg it around January 1st. Will the pellicle fall when it's "ready" or do I just keg when it tastes right?

When it tastes right. A pellicle won't always fall. If it doesn't & your taste buds are telling you it's go time, just carefully put your racking cane through it, rack from underneath & leave a little extra so you don't suck the pellicle into your bucket/keg/bottles. I'd probably get rid of that first ounce or 2 as well, but that's just me.
