Fermentation Controller Error-ed Overnight

Tue Mar 04, 2014 11:11 am

I woke up this morning to find that my fermentation bar (which i built with old refrigerator parts and a arduino microcontroller) error-ed when I was asleep and my fermentor was at 60F. I'm fermenting an APA with WLP001 and I have been holding it at a stead 68 degrees. Best case scenario it was that cold for an hour worst case it was like that for upwards of six.

I'm wondering what types of flavors/effects I might gain/loose from this.

how long had it been fermenting? likely you will notice no difference at all. 001 is a workhorse and does not mind the cold too much. greater concern is high temps.

+1

I LOVE 001 in an IPA at 60F. Clean as a whistle!
You may end up changing your process if you like it.

The issue is you went from warm to cold....which may trigger the yeast to just give up and fall to the bottom...But I agree if you started at 60 you would be fine... would depend on how long it had been fermenting

Where were you measuring the temperature? Check your thermocouple or RTD - may be a bad temp sender or wire. 68F may be too high if not measuring center mass on the Fermentor. Yes, 001 and 1056 can produce bad or unwanted esters and phenols. All yeast can. I run 62F with those American Strains. Best beers I have made I run low and slow.

I have had the same thing happen with my temp controller and the beer came out fine. Whatever you do, do it gradually, monitor gravity, and try to help the yeast do their job rather than force them to adjust to a new temperature.

I happen to like the way 001 performs at lower temperatures. I usually run at 64 degrees for the first 48 hours and then ramp a up to 68 one degree per day.
