Citrus Additions look about right to me but the starting gravity seems a bit low. With the same yeast I expect to get about 30 points of attenuation, in Plato, leading to your mead possibly drying itself out. I probably would have gone with four gallons of H2O instead of five but you are well on your way to something very tasty I think.

I've been debating adding another 5 lbs of honey to the mix, although I was shooting for a semi-sweet finish.
