Pectic Enzyme

Mon Jan 21, 2013 10:23 pm

How long do I have to wait after adding pectic enzyme to my must before pitching my yeast?
Is it ok to shake up and aerate the must after adding the pectic enzyme and yeast?
At what point can I add some yeast nutrient?

Thanks :D

Aerating and adding yeast nutrient with pectic in there should be fine. I believe the instructions are to add it an hour before you pitch.

You might run the risk of losing much of your dissolved O2 if you aerate too early before pitching yeast, as it can come out of solution somewhat easily.

True. I'd do pectic, wait an hour, add nutrient and aerate, then pitch.

They were all quite similar, but my base was very simple. I haven't had any in a couple weeks, so need to go back to them and see if there is more difference that I can pick up now.
