Cider Yeast Question

So the wife and I were talking the other day, and we came up with an idea. She really likes ciders and saisons. So we were thinking of making a cider with a Saison yeast. I'm just curious if anyone has tried this before or something similar.
I think I've had about enough beer tonight...Now I need some Whiskey to sober up

I've only used Wyeast 1056 (or dry US 05) and Nottingham (sp?). Now my ciders were 1/2 wort and 1/2 apple cider and were more like a really cidery beer. I usually split this wort between a cider and braggot.

Since cider is often sold in 1 gallon sizes I'd say go for it, but on a small batch size 1-3gallon that way if it sucks or she doesn't like it there won't be much to drink or you could use it to blend with other things.
