Roasted Chicken

This made an awesome roasted chicken and wonderfull gravy. I threw some taters and carrots in the roasting pan too.

SWMBO does the Bourdain (OK, it's some other guy who I've forgotten the name of) recipe that can't be simpler:
Preheat oven to 475
Salt and pepper the bird and then truss it up with twine
Stick it into the oven and reduce temp to 465 for an hour.

Pull it out of the oven, tent it with foil for at least 10 minutes and then cut into it. Simple and fabulous. Works for birds 4~7pounds--all the same time. My oven may be up to 10 degrees optimistic, so factor that in!

To mix it up sometimes I'll put the chicken on the BBQ spit and let it spin for 70 or so minutes.

I have a 4 burner gas grill, so keeping the left and right on low, the two center burners off and a foil drip pan under the bird lets you close the lid and have basting fluids, eliminates flame ups. The spinning itself also helps the bird self baste.

I enjoy Saco's way just as well. Free Range chicken is worth the extra $ for me as it is tastier and not full of hormones. Our house is hormonal enough with all of the teenagers.

Another twist is splitting them in half and using a griddle and brick on the BBQ.....

Teenagers are requesting a batch of teriyaki wings for tonight.
