funny you ask. I smoked some venison steaks on monday. I did it for like only 1 hour at about 250F and it dried it out. But the venison was in the freezer for 3 years.

If i did it again, I'd load the top of it with bacon or salt pork.

Thanks for the sausage recipe's.

Booboo, this what I assumed will happen, but my friend who is providing all of it really wants smoked meat. I am thinking only a lite smoke then grill it afterwards.
