+1 on the temp probe. Mine is not wireless and only has one probe, but handy on the smoker (or in the oven for yesterday's turkey) and set an alarm temp for your doneness.

BC - That wireless probe is well worth the money if you do a lot of long smokes. When I'm doing a full load, it will often take 22-24 hours. Since it has an alarm you can set for certain temps (high and low), it allows me to get some solid sleep as opposed getting up every hour or two to check it.

I use a Weber and love it. It gets cold and windy here in northern Iowa and it handles the winters well. The wind has more of an effect than outside temperature, so I use a wind block and cook less amounts per cook to help the temps. As far as control, I can hold 225-240 for 12-14 hours before adding more fuel if needed. At work we sell Brinkman, Weber, Traeger, and Big Green Eggs and for the price and the cost/grill area ratio, I feel the Webers are the best.

Like in brewing, there are many gadgets you can get and modifications you can do in bbqing.

-Even if alcohol does kill off brain cells, we all know alcohol goes for the slower, weaker ones first -- making your brain more sleek and efficient.

I just have one word for cost/ grill area ratio. UDS. Or is that three words? Best smoker for the money.

I have plans for making a single UDS and a double UDS, just haven't had the time or driving want to do one yet. I think it would be fun.
