What the hell it that?! That ain't sausage it's more like meatloaf. But why would anyone eat that? It looks like baby vomit.

Hahaha... that's the response I thought I'd get. My grandfather was an old Pennsylvania Dutchman and made the stuff as well as regular cased sausage, sauer souse, and many other PA Dutch "specialties" that are better left undescribed (they use every part of the pig except the squeal, and every part of the cow except the moo). You have to be careful which farm you get it from so you know they aren't using the shit that was unfit for hotdogs. As long as they don't put too much liver in it, I'll eat it... fried up in some bacon fat and some maple syrup on top... YUM :!:

I'm curious, is the label (circle-slash) in the upper-left corner of your grinder a "no-pants" warning?

Oh, and this is the second time in as many days that I have heard the term "scrapple". What the hell is scrapple?

basically, when you butcher a hog, you boil the offal and carcass to get the rest of the meat off and make a broth, take out the offal and loose meat and chop/grind it up, add mostly cornmeal and buckwheat flour to the broth with your spices to thicken it and add the meat back in, blend it up, set it in loaf pans to congeal, then you cut slices off and fry them to eat.

The way my Pap made it, he spiced it with lots of white and black pepper, salt, sage, and marjoram.
