I'll go on the record as being a coward. I'm way to chicken to try open fermentation. That and my dogs would drink it all. That or the cat would drowned in it.

Open fermentation does not mean no cover at all. Most people doing "open fementation" use foil to cover ther carboy. The theory is that the airlock creates back pressure that stresses the yeast.
