I almost always force carbonate. That's what I did w/ this stout.

The Hefe that I am working on right now is carbonating naturally in the keg. I added back some of the wort from brew day (saved it in the lagering refer and 35F) and re pitched w/ new yeast. I did do forced CO2 w/ the other two of the kegs from the batch. I haven't tried the nat'l ones yet, so I can't give a report comparing the two.

I was planning on doing this beer. I searched the internet for this extract and found some. As it turns out, I am dim-witted : they have coconut extract at the local grocery store.

I would be interested if Doc had used a better quality source though.

Well, I finished my Chocolate Coconut Stout, bottled 'er up and have been doing some sampling. I really like the beer. I used the equivalent of about 3.5 drops/bottle of coconut extract. It is just subtly detectable and I kinda' like it that way. If you didn't tell someone it was coconut, they might not notice or know what it was. But , if you mention it, they would know.
