Plus the real savings isn't from time you're gone. With a traditional water heater you're keeping your 40 gallons (or whatever size you have) of water heated 24 hours a day for that 1 hour you need it for showers, dishwasher, washing machine, whatever. With a tankless, it's only heating it when you need it.

This is true. Not a problem here in Sydney but in colder climes, definitely a consideration.

Oh... and Bub... Gas heaters have a shutoff valve too. At least they do here. Dunno how they hook them up over there.

I didn't go tankless... I went solar. All the hot water I can eat and the sun does most of the work.
