Hydrogen sulfide in my Koelsch

Sun Jan 15, 2006 6:53 pm

I've been brewing from extract kits for a long time. For the first time, I tried a Koelsch kit. Followed directions to a tee. Brewed at 54 degrees, got a clean fermentation and bottled it two weeks ago. Tried a bottle just out of curiousity even though it's early and ought to be lagered for a while. Wasn't bad, but I noticed a very distinct odor of hydrogen sulfide. Never ran up on that in any of the many batches of other ales I've made. Anyone had this experience? I wonder if it will diminish with lagering and aging?

Yes, the kolsh yeast can be like that. The yeast bite stays around longer than usual, as does the HS smell. This is a beer that needs to be given more time to age, even though it is an ale. I am drinking one now that's been in cold storage for 6 weeks it's just starting to turn the corner. I have been sampling it for the last few weeks on a weekly basis, The change in the last week is amazing. I have filtered Kolsh in the past to speed things up a bit, but thought I'd try it the natural way this time.

Hang in there, drink something else for a while and let your Kolsh sit cold. Try it in a month, you'll be surprised...
